Try this delicious twist on traditional bangers and mash, the deep flavours of the mash stand up perfectly to a hearty banger or two.
Ingredients:
Sweet potato 1, peeled and roughly chopped
Pumpkin or butternut squash 500g (1lb 2oz), peeled and roughly chopped
Potato 1, peeled and roughly chopped
Butter 50g (2oz)
Soy sauce 3-4 tbsp
Spring onions 2-3, trimmed and finely sliced
Sesame seeds 1 tbsp, toasted
Sausages and cabbage wedges or broccoli to serve (optional)
Method:
1 Put sweet potato, squash and potato in a large pan, cover with water and bring to the boil. Reduce heat and simmer for 20 minutes until softened.
2 Drain vegetables well, then tip them back into pan. Dry over a high heat for 30 seconds, then add butter and soy sauce and mash until smooth. Season with freshly ground black pepper.
3 Stir in half the spring onions. Scatter mash with sesame seeds and remaining spring onions.
Serve with sausages and cabbage wedges or broccoli, if you like.
